This is a healthy tomato salad that is stacked between layers of tomatoes, bell peppers and arugula, to make a delicious and creative meal you won’t have a problem eating.

Makes: 4 servings

Total Prep Time: 20 minutes

Ingredients:

1 tsp. of extra virgin olive oil

2 red bell peppers, chopped

1 clove of garlic, minced

5 tsp. of low fat sour cream

1 tsp. of horseradish

Extra virgin olive oil

1 egg white, beaten

¾ cup of panko breadcrumbs

4 heirloom tomatoes, cut into slices

¼ cup of baby arugula
